1. Tortilla de Patatas con Cebolla
The queen of Spanish dinners, the potato omelette is a classic that never fails. Plus, it's economical and simple to prepare.
Ingredients:
700 g potatoes
300 g onion
6 eggs
Salt
Olive oil
Preparation:
Caramelize the onion: Peel and cut the onion into julienne strips. Cook it over low heat with a little oil until golden brown and tender. This process may take about 30 minutes, but the flavor is worth it.
Prepare the potatoes: Peel and cut the potatoes into thin slices. Fry them in plenty of oil over medium heat until tender. Drain well.
Mix everything: In a large bowl, beat the eggs and add the potatoes and onion. Mix well and add salt to taste.
Cook the omelette: Pour the mixture into a frying pan with a little oil and cook over medium-low heat until it sets on one side. Then turn it over with the help of a plate and cook the other side until golden brown.

2. Baked Chicken with Mushrooms
Chicken is one of the most economical and versatile meats. This recipe is perfect for a tasty meal with no fuss.
Ingredients:
2 cleaned and chopped chicken breasts
100 g sliced mushrooms
200 g sliced small potatoes
½ onion cut into rings
50 ml milk

15 g capers
1 lemon sliced
125 ml cooking cream
Chopped parsley

Oil and salt
Preparation:
Preheat the oven:To 180°C.
Prepare the dish: Place in an ovenproof dish the chicken, potatoes and onion. Add oil, oregano, parsley and capers.
Bake: Cover the dish with baking paper and bake for 30 minutes. Then add the wine, remove the paper and bake for a further 25 minutes.
Mushroom sauce: Sauté the mushrooms, add the milk and cream, and cook until boiling.
Combine all: Pour the sauce over the chicken, add the lemon slices and bake for a further 5 minutes.

3. Spinach and Carrot Bicolor Risotto
If you're looking to impress without spending too much, this risotto is your ally. Colorful, nutritious and delicious.
Ingredients:
300 g arborio rice
1 chopped onion
1 minced garlic clove
100 ml white wine
1 liter vegetable stock
200. g fresh spinach
2 large carrots
50 g grated Parmesan cheese
Olive oil

Preparation:
Spinach puree: Cook the spinach in boiling water, drain and mash to a puree.
Carrot puree: Peel and cook the carrots until tender, then mash.
Sofrito: In a frying pan, sauté the onion and garlic in oil until translucent.
Add the rice: Add the rice and stir for one minute.
White wine: Add the wine and let the alcohol evaporate.
Cook the rice: Add the hot stock little by little, stirring constantly, until the rice is al dente.
Divide the risotto: Separate the risotto into two parts. To one, add the spinach puree; to the other, the carrot puree. Mix well.
Serve: Place both risottos on the plate, creating a two-color effect. Sprinkle with Parmesan cheese.

4. Artichokes in Sauce
After times of excess, nothing better than a light and healthy dish like these artichokes in sauce.
Ingredients:
12 artichokes
2 large tomatoes
2 onions
1 dried chorizo pepper
5 cloves of garlic
Pine nuts
Olive oil
White wine
Cognac
Water
Salt and pepper
Preparation:
Picada: Fry the chorizo bell pepper, garlic and pine nuts. Then, grind them into a paste.
Artichokes: Clean and chop the artichokes, fry them lightly and set aside.
Sofrito: In the same oil, sauté the grated onion and tomato. Add the mince, a dash of cognac and white wine. Cook until the alcohol evaporates.
Combine: Add the artichokes to the sauce, season and cook until the sauce reduces and the artichokes are tender.
5. Lentil Soup with Vegetables
This soup is a healthy, economical and comforting option. Perfect for cold days or when you need something quick that will last for several meals. Best of all, the ingredients are super basic.
Ingredients:
250 g lentils (can be pardinas or whatever you have at home)
1 carrot
1 medium potato
1 onion
1 clove garlic
1 bay leaf
1 tbsp sweet paprika (or hot, if you like it spicier)
Olive oil
Salt and pepper
Water or vegetable stock
Preparation:
Prepare the vegetables: Peel and chop the onion, carrot and potato into small pieces. Lightly crush the garlic.
Sofrito: In a large pot, sauté the onion and garlic with a little oil until golden brown. Add the carrot and potato, and sauté for a few minutes.
Paprika: Add the sweet paprika and stir quickly so it doesn't burn. This is where the magic begins.
Cook the lentils: Add the lentils (previously washed), bay leaf and enough water or stock to cover everything. Cook over medium heat for 30-40 minutes, until the lentils are tender.
Adjust the flavors: Add salt and pepper to taste and, if you like, add a drizzle of olive oil when serving for a special touch.
